I think they could do new-who stories in the style of Big Finish's Companion Chronicles. A companion is telling a story, with other voice actors playing other characters in the story. We could have CC's with Jack, Jackie, Martha, Micky, Clyde, Rani, Adam, Wilfred, River, and others.
Also, Arthur Darvill is in Big Finish's Frankenstein soon. David Tennant may return, because he was in Colditz , Unbound, and a couple of others.

@gunslinger19 The cheapest ones are the first 50 DW audios, which cost $2.99 to download. The others are a bit more expensive, but they do sales quite often too. I'd highly recommend them. =-)
It will be mine, oh yes, it will be mine. Seriously though, Mann writes great war scenes. I couldn't recommend Short Trips: Rise and Fall any more highly. A great audiobook, read by the legendary William Russell.

I'd add the Reapers to the list. Problem is, the episode may just become a repeat of Father's Day. Although if the Reapers did their job properly, they would show up nearly every episode due to the paradoxes caused in recent episodes.

I find Rose to be quite overrated. In my opinion, the reason this spin-off has gained such support, is that people want 10 and rose back. That isn't what Doctor Who is about. It's not about x character forever. I wouldn't mind a companion spin-off, but I think the Meta/Rose show would be a step back for a show which is entering a new age. The age of Capaldi. =-)

The Doctor could scan for objects to progress through levels, (like Jack Sparrow's compass in LEGO pirates of the Caribbean). Leave the fighting to the other characters.
