Every time we order this in a restaurant, the waiter gets this funny look on his face, I always wondered if maybe its a kids drink. It always makes me think of my Mom, who would eat leftover rice with milk, cinnamon, and sugar - for breakfast! Anyway, great fun to make on your own, so thanks for sharing!

I swear that real beets are nothing like the nasty pickled kind from a can. We love them roasted, hot or cold, and they are great with something tangy like goat cheese. One recipe I make over and over is Gingered Beet and Field Pea Salad from Simple, Fresh, Southern by the Lee Bros.

Thanks for posting this! I made it today only without the sugar, and while it doesn't get syrupy exactly without it, the proportions of flavor were great and allowed us to have pumpkin spice latte for the first time since cutting out sugar!

If you haven't read Karen Russell's short stories - "St. Lucy's Home for Girls Raised by Wolves," you simply must. Her characters and landscapes are even better in a short story format. It was my pick for a book club I am in and everyone is having a great time reading them! It is my favorite book I read this year.
