@RichardSchwartz the illnesses in the Jewish community caused by animal-based diets are a function of excess - too much food is eaten; and much of that excess is cake, fried potatoes, and a dozen other non-animal products.You can be a vegetarian and still kill yourself with any of the big three - diabetes, hypertension & stroke, or coronary disease. What's threatening our planet is that too many people drive too many cars with too many coal-fired plants generating too much wasteful electricity. Eating tofu instead of chicken might make you feel like you've done something - but it's a bit presumptuous to think that the world will suddenly give up the most efficient creators of high-quality protein - the chicken and the dairy cow - to satisfy your pseudo-science and your misplaced concerns for the health of the "Jewish community"
It's a bit presumptuous to put words in God's mouth that were never uttered at Sinai. For all we know, the reason the cow was created was to provide a chuck roast to go in the cholent. But we don't know, so we're not going to speculate.
It's nice to conflate ethical, pseudo-religious, moral, and health positions to advocate vegetarianism. But for every chief rabbi who was a vegetarian, there were a hundred others who relied on meat as a part of their diets; and for every perceived "cruelty to animals" that you can find on a farm, you will find that the workers who pick lettuce or sort potatoes are no better treated.
If you think that vegetarian diet satisfies your need to feel morally superior, go right ahead and enjoy your sense of self-satisfaction; to the rest of us, it's a position which may sound a bit like a "pick-and-choose" to compensate for other areas where you find yourself deficient. You can't solve your ethical deficiencies by worrying about cows, how they're impregnated, and what is done to fatten their offspring.

But to suggest for one moment that it can make up for or get even for even one life, let alone for 6 million slaughtered Jews, is sophistry in the extreme and an act of self-serving propaganda that should be called out for what it is.And there are a lot more worthy uses for money in the world of Jewish life than dedicating more and more sifrei torah while day schools turn away kids whose parents can't pay tuition.
