I've thought a lot (A LOT) about "best time of day / day of week to send" ... specific to mobile. My stock answer is: The best time to send is whenever your audience is likely to open/read/convert.
Mobile changes that game. I (no data to back this up) think it's a fluid one as we are checking our devices ALL THE TIME. Think about your own behavior. Do you have a set time/day when you check email on your phone? Nope. You check while in the bathroom, at a stoplight, while changing your kid's diaper. Ha!
